Equipment Needed
- A sharp knife and chopping board
- A food processor or meat grinder
- A mixing bowl
Ingredients
- 1 Kg. pork belly Skin removed, I also remove most of the fat directly below the skin
- 1 Kg. beef shoulder
Minced meat Spices:
- 30 gr. salt
- 6 gr. freshly ground black pepper
- 3 gr. dried cilantro
- 2 gr. cayenne pepper
- 1 gr. garlic powder
- 1 gr. nutmeg
- 1 gr. crushed cloves
- a sip of vinegar
Instructions:
- Cut the meat into pieces from about 2 cm. each.
- Season your meat with 2 tbsp. Minced chicken meat spices (1 Tbsp. per 500 gr. meat)
- Put the seasoned meat in the freezer for about an hour. This way your meat will get firmer and easier to process in the meat grinder.
- Chop the meat with the largest screen (8 mm.) for coarsely ground meat.
- Chop the meat a second time with the middle screen (4.5 mm) for finer chopped meat.
- Your minced meat is ready! Have fun making burgers, fatties, and meatballs.
