Once known as Pulao, this dish, named after the word ‘Birian’ which fried before cooking, became popularly known as Biryani.

Briyani Masala
One to two bay leaves
1 Star anise
10 to 12 green cardamom
8 cloves
One and a half black cardamom
Half teaspoon black pepper
2 grams cinnamon
One and half teaspoon fennel seeds
One teaspoon shahi jeera
One and fourth teaspoon grated nutmeg
Two stands of maze
Dry roast all these spices and condiments together on a low flame for one to two minutes. Then grind them finely to make biryani masala. If you make this masala in a large amount, you can store it in an airtight container for up to 2 months.
Marination
Take three to five tablespoons of plain yogurt.
Add turmeric, ginger garlic paste, garam masala, salt, chili powder, and lemon in it and mix it properly in a large bowl.
Take the chicken, make small slits it in, marinate it well, and keep it aside for 1 hour. You can also keep it aside overnight.
Preparation of Chicken Biryani
Rinse two cups of rice and soak them in water for 30 minutes.
Soak a few strands of saffron in milk and keep it aside.
While rice is kept aside to soak, heat a large sized and heavy bottom pressure cooker.
Roast 2 bay leaves, 4 green cardamoms, small pieces of cinnamon, 1 star anise, 6 cloves, three fourth teaspoons of shahi jeera, and 1 strand of mace in the oil.
Add thinly sliced onions in the oil with all the condiments and roast them till they turn light brown.
Add marinated chicken, roast it for 5 minutes, and then cover it with a lid. Let it cook on low flame till it turns tender and soft.
Making Chicken Biryani
Once the chicken turns soft, add one fourth spoon yogurt, 1 teaspoon of chicken biryani masala, three fourth spoon of red chilli, few mint leaves, two to three slit green chillis.
Drain the rice and spread it evenly over the chicken.
Boil 2 cups of water in a separate bowl.
Pour this boiled water gently across the sides of the pressure cooker and then on the rice. Also add saffron soaked milk with it.
Level the rice and cover it with a lid. Stop the flame after one whistle and open the cooker after pressure releases.
Your chicken biryani is ready to serve.
