And, for most of them, chicken leg or wings in roasted form is their go-to dish, and extremely satiating. So here, in this blog, we will share a simple recipe for making roasted chicken at home.

Preparation of Roasted Chicken Leg

  • The first step in preparing the chicken leg, breast, and other pieces for roasting is to dry it properly.
  • After this, we prepare the marination. Take hung curd, add spices and condiments to it and mix well.
  • Take the chicken leg and pieces for roasting and prick the chicken to make small cuts. Pricked absorbs the flavour of the marination and is aromatic after being cooked.           
  • After the marination is prepared, add chicken to it, mix it properly and leave it for some hours so that it soaks in the flavour of marination.

Once the chicken is marinated properly, throw some celery in the oven tray before sliding the tray into the oven.

Roasting in oven

Preheat the oven between 250-350 F. Place the chicken in the oven and let it roast. As the chicken breast, leg, and other pieces start roasting, you will see marination juices drying up and chicken colour changing to golden brown from pink. As it turns golden, its skin starts becoming dry and smoky. It gets completely cooked after the chicken skin becomes dry and its colour turns to golden. It will take 15-20 minutes for the chicken to get completely roasted. Pull the chicken out of the oven and take in the aroma of freshly roasted chicken.

Barbecue roasting

 If you are planning to roast chicken leg, breast, and other pieces in a barbeque, you need metal skewers to hold the chicken and coal.

  • Hand the chicken in skewers and keep them aside.
  • Heat the coal in a barbecue till it turns red.
  • After the barbecue is hot, place the skewer over it.
  • Keep on rolling skewers so that the pieces get roasted properly and no part of the chicken is left uncooked.
  • Once the chicken is dry and completely roasted, pull them out of the skewers using tongs.
  • Serve them hot and enjoy the smoky flavour of barbecue roasted chicken.
